When in New Mexico, this is one general store you can't pass up. This is the place where chef Rahm Fama found comfort in this very basic meal, in fact he continues to eat it to this day. In essence, the dish is composed of corn chips loaded with cheeses, onions and New Mexico chili. It all melts perfectly in a Fritos bag and it really does bring our chef back to his childhood days in a flash.
